Resident Food Favorites - Episode 1, Green Bean Salad!?

When you think of food favorites for seniors, I always go to the classics - meat and potatoes, pasta dishes, maybe even liver and onions! That's why it was so surprising when I asked our residents for their mealtime favs and one of our manliest men, I'll call him "J", raised his hand and proclaimed "Green Bean Salad!"





Our talented chef, Mandi Isbell, prepares some remarkable dishes, and I think our food is some of the best out there in the Senior Living world. It is prepared on site in our open kitchen right before the eyes of our hungry residents. You know its good when something as, dare I say it, ordinary as Green Bean Salad is highlighted by our residents as "the best we've ever had"! That's cooking talent if you ask me!





So here it is, the recipe for Green Bean Salad, a food favorite here at Commonwealth House that can be a meal on its own or a great side for a summer picnic or pot luck! Enjoy!


Ingredients:

2 cups of cooked green beans

1/2 red onion, sliced

1/2 cup of sugar or sugar substitute

1/2 cup apple cider vinegar

1/4 teaspoon salt

2 tablespoons Olive Oil


Instructions:

In a sauce pan, bring sugar and vinegar to a boil.


Meanwhile, in a bowl, mix green beans, red onion, salt and olive oil. Once the vinegar mixture comes to a boil, remove from heat and add the green bean mixture. Mix thoroughly and refrigerate until ready to serve!
